Is there any solution that similar with SN74LV4051A(1 channel 8:1 mux/demux) but with output latch function.
The output will keep last state unless it changed.

This device is a passive switch; it does not have inputs or outputs.
It's possible that you want something like the SN74HC259.

Since I can use COM pin as input and Yn pins as output, what I want is, at the 1st time, I choose Y0 on and the output is high, then I choose Y6 on and output is low, but I need Y0 keeps "HIGH" untill I choose and changed it.
If after 2nd time, I choose Y7 on, then output low, what I want to get are: Y0=high, Y6=low, and Y7=low, and so on.

As Clemens mentioned this is a passive switch so the SN74LV4051A won't be able to provide this function. I'm going to loop in the logic team to see if we can find you the right fit.
