Hi Alberto,
For the water leak sensing, the TIDA-01518 design leverages a single transistor and two prongs. Once the resistance is reduced from the presence of water between the contacts, the alarm goes off. As far as the recommended sensors, from what we have seen, most use this same method, so I am not aware of any actual "sensor" that can do the same. Let me look into this and get back to you with a definitive answer.

After doing some research, I found a few company that have cable style probes for water leak detection, which can be used with TIDA-01518 in place of the onboard probe. Please find the links to the websites below:

Also, I was able to locate an actual discrete sensor that can also be used with the TI design. Here is a link to the probe:
