I using SimpleLink CC2640R2 SDK - 5.30.00.03

I hope you are doing well. It does not seem we have a complete ADC temperature example like we do have on the cc13xx-cc26xx SDK, but I will keep on looking. We can reference the demo->portable->temperature to see how the CC2640R2 handles temperature.

What temperature sensor do you intend to use? You can try the adc single channel drivers example program to read the raw adc temperature data.

For periodic sampling reference adcsinglechannel example, and modify the ADC_SAMPLE_COUNT;. You could also setup a separate function or task with custom code for your specific case. 

You can also modify the sampling duration if needed.
