Nonlinearity is used to measure the "curvature" of the Gain transfer function, which ideally should be a straight line passing through (0,0) on a two-D plot, with a slope of 100 in the case of INA198. In reality it is probably not an ideal straight line. Nonlinearity is useful in characterizing this deviation
Out of cost considerations, normally the mid-point of the input range is selected for measuring nonlinearity. I have included a spread sheet with hypothetical numbers but it illustrates how this parameter is calculated. Hope I answered your question.
