Unused outputs can be left open. Inputs must not float; you can connect them to V CC or ground, with or without a resistor.
HC family devices do not have overvoltage-tolerant inputs. Better use something like the SN74AHC125 or SN74LV125A.
HCS devices do not allow input voltages above VCC. Use a device with overvoltage-tolerant inputs such as the SN74AHC125, SN74LV125A, or SN74LVC125A. (For the MISO buffer, use something like the SN74AHCT1G125.)
