P/N: SN74LVC373A-EP 
After checking the datasheet, it says that the component can operate from 2V to 3.6V.

However, most of the contents of the datasheet appear to have been 2.7V and 3.3V.

Nevertheless, is there no problem with operation even if I use 2.5V?

    At 2.5 V, it will work correctly. However, the electrical characteristics are not guaranteed.

    Compare with the SN74LVC343A datasheet: the values are identical, so I would expect the SN74LVC343A-EP to behave in pretty much the same way at lower voltages.
